Hotel Europa (with only one star) is an economic choice and should be high on your list, if only for the great location.
When the 18th-century Seville palace-house was turned into a hotel almost 15 years ago, the owners were careful to leave Europa's Andalusian integrity almost completely intact. The original, stained glass, molding, and Mudejar doors have stood the test of time.
Rooms, much larger than you'll find in most other places, have high ceilings. When making reservations, make sure to request one of the larger rooms. Mattresses and quilts are a bit aged, though we don't think it greatly hinders the experience. (Though if you can't stand old hotel bedspreads, then move on.)
Some rooms have large glass-encased balconies that look over the quiet street. These don't cost anything extra. However, our favorite room was an interior double with a matrimonial bed and lots of antique-y dark-wood furniture. Bathrooms have all the fix'ns, such as a vanity stool, hairdryer, and toiletries. Not bad for only one star—but don't expect two.
